3 codornizes inteiras<br />
2 c. sopa de azeite<br />
200 ml de vinho branco<br />

Puré de batata congelado (ver na embalagem como preparar)<br />
Cubos de pão caseiros fritos em azeite, alho picado finamente e Bacon em tiras<br />

Tempere as codornizes num recipiente próprio para ir ao forno (depois de as lavar e secar) com cebola cortada em rodelas, o alho picado o azeite e o pimentão doce, barre a carne, adicione o vinho branco e deixe repousar 2 horas para tomar de gosto.<br />
<br />
Antes de levar ao forno tempere de sal, pré- aqueça o forno a 200º na ventoinha e quando já estiver à temperatura correcta coloque o tabuleiro e deixe cozinhar por 20 a 30 min, vá vendo se a carne está cozinhada, deixe alourar por 5 min ou menos.<br />
<br />
Enquanto as codornizes estão no forno prepare o puré como está descrito na embalagem.<br />
<br />
Corte o pão em cubos muito pequenos ou tritura grosseiramente na picadora.<br />
Numa frigideira coloque 1 c. sopa de azeite e verta o alho finamente picado, de seguida junte o bacon em pedacinhos muito pequenos e por fim o pão, isto tudo de seguida para o alho não queimar, deixe fritar ou torrar o pão em lume baixo a médio, vá envolvendo para não queimar.<br />
<br />
Quando estiver tudo pronto, numa travessa coloque o puré de batata, as codornizes com um pouco do molho que ficou no fundo do tabuleiro e de seguida o pão frito.<br />

Num tacho colocar o azeite e a cebola, deixar alourar juntar o alho, as asas de frango e temperar com sal, deixar alourar o frango em lume médio uns 5 min.<br />
<br />
De seguida colocar meia lata pequena de tomate pelado inteiro ou em pedaços e o refogado da Compal, misturar tudo, deixe refogar uns 5 min. em lume médio, depois verta o vinho, a água e a salsa picada, deixe ferver.<br />
<br />
Baixe o lume para médio e deixe cozinhar aproximadamente 15 a 20 min, mexendo de vez em quando e vendo se está cozinhado a gosto.<br />
<br />
Lave e seque os espargos, de seguida prepare-os retirando a pele com o descascador de cenouras.<br />
<br />
Quando estiverem quase prontas pré-aqueça uma frigideira grelhador e coloque os espargos a grelhar, pode adicionar uma pitada de azeite só para não pegarem ao fundo, tempere com sal, tempo de cozedura aproximado de 2 min de cada lado se forem finos.<br />
<br />
Se gostar pode colocar ao lado dos espargos 2 fatias de Bacon e deixar grelhar combinam muito bem com o sabor do espargo.<br />

Pela primeira vez fiz pato confitado, tinha duas coxas e não sabia o que fazer e já tinha visto no programa do Chef Henrique Sá Pessoa, Ingrediente secreto um confite de coxas de pato, e assim saiu esta experiência maravilhosa e que já repeti.<br />

Coloque as coxas de pato num recipiente e tempere com o alho esmagado, o tomilho limão, as folhas de louro e sal, regue com o sumo de laranja e deixe marinar 8 horas ou pelo menos 2 horas.</div>

Preparação: Pré aqueça o forno a 200º na ventoinha.</div>

Seque bem as coxas de pato e coloque num tabuleiro para ir ao forno, verta o azeite com as ervas aromáticas e leve ao forno tapado com folha de alumínio aproximadamente 1 hora, após esse tempo retire a folha de alumínio e deixe por mais 30 min até alourar a 220º.</div>

Tempere com antecedência o fígado com sumo de limão, vinagre, alho esmagado, folhas de louro e vinho tinto, envolva toda esta mistura e deixe tomar sabor durante 2 horas.<br />

Prepare uma frigideira com uma pitada de azeite, junte os dentes de alho e o louro, deixe aquecer, junte o fígado e deixe cozinhar uns 30 segundos de cada lado ou até estar cozinhado a gosto.<br />
<br />
Retire o fígado e reserve, junte a marinada e deixe em lume médio até engrossar o molho durante 3 min.<br />
<br />
Desligue o lume coloque o fígado no molho e sirva com as batatas.<br />

Corte as batatas em rodelas e coloque num tacho com água fria e tempere de sal, leve ao lume e deixe cozer aproximadamente 15 min ou até estarem a gosto, depende da espessura do corte.<br />
<br />
Prepare a lula, abra ao meio, limpe e lave bem, de seguida seque num pano e reserve.<br />
Aqueça o grelhador eléctrico ou faça churrasco, deixe a grelha ficar bem quente e depois adicione a lula, deixe cozinhar uns 3 min de cada lado. Eu coloquei uma frigideira a fazer peso em cima da lula para não enrolar.<br />
<br />
Depois de estar tudo cozinhado, retire a água ás batatas e coloque numa travessa, corte a lula em pedaços e tempere com sal fino, azeite, vinagre e cebola cortada em cubos, adicione uma pitada de salsa picada. Sirva em separado ou misture tudo no prato fazendo uma salada.<br />

Corte uma fatia grande de broa de milho de seguida divida em 4 ou 5 pedaços.<br />
Corte o queijo em pedaços mais pequenos que a broa e reserve, corte 2 fatias de chouriço de carne ou vermelho.<br />
